Does anyone have any clues as to what kind of printer used the "Ink Jet Printer" driver? The most I've ever been able to find was "a Canon printer" but hey thanks, there's been at least 50 models of Bubblejet since 1985.

It's a Canon PJ-1080A. I've got one, and compu_85 has put videos of one on YouTube. The ink reservoirs are separate from the print heads, so the inside of the machine has a bit of plumbing  :)

I think you can find the paper if you're lucky, but I don't think you need it. You can print on single sheets of ordinary paper with a little bit of effort, and you can also feed through tractor-feed paper with the tractor-feed strips torn off if you want to print all in one go.

Replacement ink on the other hand appears to be quite scarce.

The paper is mostly standard, it's got a clay coating on it so the ink doesn't soak in. That makes the printing sharper.

The ink tanks are not hard to refill with standard inkjet ink. Just use a syringe, and be sure to get all the air out of the ink bladder. The waste ink pad is also easily washed.
