In general, they are RS-232 as usual.
There are some variations to support LocalTalk on Serial B, and the support/configuration of handshaking lines etc. depends on the software/drivers in use.
Note the back-panel parallel port uses the same DB-25 connector, but it uses ordinary TTL voltages, so you should be careful to avoid misconnecting the cables.
