>Are there any custom chips in the Lisa?
Only one comes to mind: There is a mask programmed COP421 microcontroller on the I/O board that handles keyboard, mouse, and RTC. We don't have the source code, and no-one has extracted the binary AFAIK, although attempting that is on my to-do list.
The Lisa 2/10 version has a second custom chip on the I/O board, which is much like the IWM in the original Mac.
Some other chips are obsolete and may be quite difficult to find or very expensive, especially in quantity.
