There was a small effort for openbsd here: http://www.bsdforums.org/forums/archive/index.php/t-35857.html but not sure how far it got.
Might be nice to see a FUSE for windows too, but I don't care that much about windows these days.
I've no idea how far any of these projects have gone towards getting ZFS up and running - likely they are all in their early stages. I'd hope that future versions of OS X will implement ZFS natively without FUSE, but that might be a way to go as well.
