I expect this is due to a poor contact to the CPU board or memory board.
It may be adequate to eject each board slightly, then put it back in; this "wipes" the contact fingers which can displace oxidation, dust, etc. enough to make contact again.
If that doesn't work (and even if it does), you may want to pull all the boards and clean the gold contacts of the edge connectors with alcohol or electronic contact cleaner. For stubborn build-up, you can use a soft pencil eraser (but be gentle so the gold plating is not erased!)
If those don't help, pull the XLerator and check that all the pins are in good shape. If they are, then try without the XLerator (eg. insert the original 68000 CPU in the CPU board). If that changes things, let me know directly and I'll help troubleshoot.
BTW, I believe the original XLerator doesn't work with 2M SIMMs (unless it has had the 1994 4M SIMM modification applied, which consists of a piggyback chip soldered on, and a couple of flying wires). If it does work, I would predict you would only get 1MB from each. This is a separate issue from the random screen display, as the XLerator RAM is not turned on until MacWorks is loaded... the video screen uses RAM on one of the slot memory boards.
